Sweet Potato Pancakes (vegan and grain-free!)
A Simple, Nutritious, and Tasty Breakfast Idea (vegan and grain-free!)
If you like sweet potatoes (and even if you're iffy about them) this is a great recipe for breakfast or brunch on the weekends!
The best part---You're not going to believe how simple it is!
INGREDIENTS:
- One or Two sweet potatoes (regular orange ones or purple, as in the photos)
- Maple Syrup, peanut butter, berries, bananas, or any other pancake toppings you love
Preparation:
Step 1: Begin preheating your oven to 350 degrees farenheit.
Step 2: Slice the sweet potato into quarter-inch slices (doesn't have to be precise)
Step 3: Arrange the sweet potato slices on a baking sheet. Tip: If you're worried about them sticking, it may help to coat them with a little oil and/or place a layer of foil on the baking sheet.
Step 4: Bake the sweet potatoes for 15-20 minutes or until they're soft enough to cut with the side of a fork.
Step 5: Place a few slices on a plate and top them with your favorite pancake toppings.
Step 6: Eat!
This recipe will satisfy your craving for a wholesome and comforting breakfast, and the fact that it's a nutritious, whole-food option is a great plus!
